La Cocina, San Francisco (2005-present)
La Cocina started as a nonprofit shared commercial kitchen in San Francisco's Mission District. It offered affordable kitchen space, business training, and market access to low-income food entrepreneurs, many from immigrant communities.
Dozens of small food businesses launched, many going on to open their own storefronts and restaurants.
The model proved that shared kitchens plus hands-on support can turn informal cooks into stable, self-sustaining businesses.
FEED Kitchens is Madison's version of this model, and the smokehouse is the latest test case of whether the approach still works.
